Humble Chickpea Deserves Attention

Originally from in the Mediterranean and the Middle East, chickpeas, also known as garbanzo beans, have spread their culinary influence to areas all over the world. Like other legumes such as beans, peas and lentils, chickpeas are prized for their high protein and fiber content, and also contain several key vitamins and minerals known to benefit human health. Chickpeas are:

  • Low in saturated fat, and very low in cholesterol and sodium
  • A vegetarian source of protein, with 15g per cooked cup
  • A source of 10 different vitamins, including vitamin B6, vitamin E, vitamin K, vitamin A and vitamin C
  • A good source of dietary fiber, protein and copper, and a very good source of folate and manganese

Chickpeas have a delicious nutlike taste and a texture that is buttery, yet somewhat starchy and pasty. A very versatile legume, they are a noted ingredient in many Middle Eastern and Indian dishes such as hummus, falafels and curries.
