
Potato – the Naturally Healthy Spud
Potatoes are one of the oldest vegetables known to man and have been consumed since prehistoric times. The Inca Indians in Peru were the first to cultivate potatoes around 8,000 BC to 5,000 B.C. Native Americans were growing sweet potatoes when Columbus came in 1492. The potato is the world’s fourth largest food crop, following rice, wheat, and maize. A medium potato is only about 100 calories when baked in the skin, making them an ideal food for weight management.
Sweet potatoes:
- Provide a very good source of Vitamin A, Vitamin C and manganese
- Are naturally sweet-tasting, but their natural sugars are slowly released into the bloodstream
- Supply a good source of dietary fiber, Vitamin B6 and potassium
- Are low in sodium, and very low in saturated fat and cholesterol
White potatoes:
- Provide an excellent source of Vitamin C
- Are a good source of potassium (more than a banana!)
- Supply a good source of Vitamin B
- Are low in fat and sodium and cholesterol free
